Chocolate Chip Cookie Dough Overnight “PrOats”

I often times wonder how I have time to make breakfast most mornings. For one morning in particular this week, I just KNEW it was going to be a cluster eff getting the kids out of the door without forgetting to pack a lunch or match socks. Sometimes I don’t mind waking up at 6am to make a spinach feta frittata and sometimes, I just don’t wanna.

If you get a case of the “I just don’t wanna’s,” you’re in luck! I found this 1 min recipe that sits in your fridge overnight. I would love to say that you could take this on the go, but I fear that because you need a spoon, you can’t eat this while driving. But it’s definitely an on-the-go recipe! It’s good hot or cold and can definitely be eaten at 5am before you coach Dawn Patrol, or post workout as you are rushing to get to work. Either way, it’s a quick grab and go breakfast…and who doesn’t love something that tastes like a cookie!?

If you haven’t noticed from IG lately, I’ve been on a chocolate and oats kick. I love playing around with ingredients until I get sick of them. My apologies if you get sick of oats before I do. I’m just not there yet. The fact that these are packed full of protein makes these “PrOats” and not just “oats.” Can you blame me for putting protein in them? Why not! Try this one out. I think you’ll like it!


Chocolate Chip Cookie Dough Overnight “PrOats”

Serves 2

Clues

Microwaveable your banana in a microwave for 30 seconds (this gives it a caramel flavor!)

Gently chop banana (leave it slightly chunky). Add the rest of the ingredients (except choc chips) and mix well.

Half the mix and pour into mason jars or storage containers. (About a ½ cup serving each).

Place in refrigerator over night.

When ready to eat, remove from fridge, mix in choc chips and enjoy! Optional: an extra splash of milk when eating.

Ingredients

1 cup Gluten Free Rolled Oats

1 cup Full Fat Milk or Almond Milk

1 very ripe Banana

2 scoops Vanilla Protein Powder

1 teaspoon Vanilla Extract

¼ teaspoon Butter Extract (don't omit this!)

Dash of Sea Salt

1 teaspoon Honey

2 tablespoons Enjoy Life Choc Chip or Semi-Sweet Choc Chips
