Honey Chipotle Dressing
If you are anything like my best friend, when you eat Gluten Free or lower carb meals (aka Paleo or Primal), your go-to place is Chipotle. Let’s be real. I know you all eat there multiple times. Have you ever put their honey dressing on your bowls or salads? AH-MAZING! Oh and can we just talk really quick about how come EVERY time (and I literally mean every time) I go to Chipotle and ask for double veggies, they look at me like I asked for something off of the menu? Yes, double veggies. 4 little slices of bell pepper and red onion aint gonna cut it for me sister. They’ll gladly dumb a heaping ladle-full of guac on your place but are stingy on the veggies. I don’t get it.
Anyhow, feel free to skip the line and make your own Chipotle bowls and burritos and top those suckers with this dressing. You can heat it up with more chipotle if necessary but the recipe as-is is perfect. Store in a mason jar in the fridge for a week or two. If it even lasts that long.
Honey Chipotle Dressing
Serves 8-10

Combine all of the ingredients in a food processor and serve immediately or refrigerate.

6 tablespoons red wine vinegar
¼ cup honey
¾ cup avocado oil
½ teaspoon dried oregano
1-1/2 teaspoons salt
½ teaspoon ground black pepper
2 chipotle peppers in adobo sauce
2 small garlic cloves, roughly chopped
